Vegetable Kurma

Vegetable Kurma

Ingredients:


Cut into small pieces

* Carrot-2 to 3
* Beans -6 to 8
* Cauliflower-100gm
* Potato-1 big
* Onion - 1 big
* Tomato- 1 big
* Green chilies -6
* Ginger -1" piece
* Garlic - 1
* Curry leaf -1

* Green peas-a handful


* Oil -2 tablespoon
* Mustard seeds -1 teaspoon
* Chilli powder- 1 1/2teaspoon
* Coriander powder 1 1/2 teaspoon
* Garam masala - 1 teaspoon
* Turmeric powder - 1/2 teaspoon
* Coconut milk 1/4 cups
* Salt to taste

Items to Grind:

* Coconut - 1/2 cup
* Fennel seeds 1/4 teaspoon
* Green chillies - 5
* Cashew nuts - one handful

Method of cooking:

Heat oil and crackle mustard seeds.
Add curry leaf, onions, green chilies , ginger and garlic one by one and fry.
Do not allow onions to become brown.

Add the powdered ingredients and fry for few minutes.

Put the vegetables in this along with the coconut milk ,salt and enough water and cook.
When it is half way through add the finely grinded paste and chopped tomato . Let it cook until done. Add a few curry leaves and coriander leaves at the end for a better aroma and flavor.

Serves for three.

Ready available frozen cut vegetable can be used.
Kuruma goes with any thing such as Chappathi, Oratti, Appam,pathri,Idiappam, Poori, Biryani, Porotta, Khubus or even with plain rice.
